My Revolution Touring bike fully loaded here in France. The bike seems to handle well with the two sets of panniers. I was a little cautious about fitting the front panniers as i thought that they may upset the stability of the steering at speed downhill. This does not seem to be the case. My top speed so far on this trip has been 35mph and the bike felt as steady as a rock.

The tourer looks great, and it sounds like a wonderful trip. Have fun, be safe, and take lots of pictures!
I've heard that front panniers, mounted low, like yours, actually increase stability. I've never mounted front panniers, but I notice a distinct wobble when I ride without hands and have loaded rear panniers.

It looks like that you would have to be careful about your luggage spread particularly at the front.
